According to the release, Solein's emulsifying properties allow for approximately three times the amount of mayonnaise to be produced by replacing egg yolk powder with the same amount of Solein. From a production perspective, this enables a clear efficiency and cost advantage for the food industry, according to the company. In addition, replacing egg with Solein enables the production of vegan mayonnaise. According to Business Research Insights, the global mayonnaise market is approximately 13 billion US dollars, and the demand for vegan mayonnaise, in particular, is expected to grow significantly.
